Recipe for Elderflower Champagne:

  • 10 Elderflowers
  • 10 l water
  • 1 kg sugar
  • 1 ungespritzte lemon
  • 50 g of citric acid
  • a few grains of rice

If you have an old enamel pot or Rumtopf, can fix it. I simply take a clean bucket and solve on the sugar and the citric acid in one litre of warm water. Then, I will give to the rest of the water, the flowers, lemon slices and a teaspoon of rice (naturally uncooked). Clear and five days in a warm place (for me, it's the sunny windowsill) leave, stir it once a day.

Then pour through a fine sieve and fill in bottles. I am always the slightly firmer 1 l thermal bottles made of plastic. It is important to close this - really good otherwise you have the Elderflower champagne on the ceiling! The sparkling wine should be then still at least 14 days cool and quiet. At the first rehearsal caution when opening - through the resulting carbon dioxide we bubbles the drink really as much real sparkling wine - delicious!
I still Elderflower champagne in the basement of 2006 – which is not more so sprudelig tastes but still really good!
